How we verify
House rule: there are no scores here. This registry does not rate restaurants or rank them by taste. It records facts: who vouches for each restaurant, which details are on file, and what date each detail carries.
What gets a restaurant into the registry
A restaurant is entered only when at least one of these five independent sources recommends it: Guía Macarfi (233 entries), Guía Repsol — its Soles, its Soletes or a plain listing — (180), Wikipaella's rice certification (120), the Michelin Guide (9) and 50 Best Discovery (4). Neither Google nor OpenStreetMap admits anyone: they only supply facts to entries that already have a credential.

We do not publish opening hours. They change too often for a stored copy to be reliable. Every entry links to Google Maps, which always has today's hours.
The four stamps
VERIFIED OPEN — at the 2026-08-12 check the business was listed as operating; the stamp carries that date. TEMPORARILY CLOSED — it was listed as temporarily closed at that check. CLOSED FOR GOOD — struck off in The Ledger; the entry moves to the archive and keeps its number. NOT VERIFIED — it joined the registry after the last check and its status has not been looked at yet; the stamp shows the date of the data. A stamp is not a guarantee: a restaurant can close the next day.
What we don't do
- We don't invent facts: if a detail has no source, the entry doesn't show it.
- We don't copy reviews from any platform; we link to the source.
- No restaurant pays to appear; an entry can be claimed only to correct facts.
- We publish no review averages, ours or anyone else's: credentials appear as what they are — third-party distinctions, named and dated.
The registry number
Every restaurant gets a four-figure number on entry (No. 0001 onwards), in first-compile order. The number is never recycled and never reassigned: if a restaurant closes, its number stays in the archive with it.
Open data
The full registry is published as a JSON dataset with per-field provenance: valenciarestaurantes.com/datos/registro.json (414 entries, CC BY 4.0; mapping © OpenStreetMap, ODbL). If you reuse the data, cite the source of each field — it is in the JSON itself.
